  • Our first important tip concerns the frying temperature of croquettes. The oil must be very hot if you want the crust to be crispy. If the oil is not hot enough, the croquettes will cook longer, will soften and fall apart in the pan. On the other hand – remember not to burn them. The ideal oil temperature is around 180 degrees.
  • Second,  choose the type of oil carefully. We recommend sunflower seed or a mixture of vegetable oils. Olive oil has a fairly low smoke point.
  • As for the amount of oil, there must be enough oil in the pan so that the croquettes are completely covered. Otherwise, the outer layer will crumble before frying. This is why the type of oil and its amount are a key part of the recipe.
  • Also, remember  not to put all the croquettes in the pan at once.  This will lower the temperature of the oil too much.

Croquettes with tuna and cheese

You can prepare croquettes for 10 people from the given amount . The base of the stuffing is made of mashed potatoes, but you can also turn them into a béchamel mass, if you don’t change other ingredients.

Ingredients

  • 2 cups canned tuna, drained thoroughly
  • 200 grams of processed cheese
  • 4 medium potatoes
  • 3 eggs
  • 1/2 onion
  • 2 cups of breadcrumbs (300 g)
  • 3 tablespoons of cornstarch (45 g)
  • 1 cup of white flour (150 g)
  • 2 tablespoons of finely chopped parsley (30 g)
  • salt and pepper (to taste)
  • frying oil (for example, sunflower)
The frying method has a great influence on the preparation of croquettes.

A method of preparing

  • Cook the potatoes until soft, without peeling.
  • When they cool down, peel them and crumble them in a bowl.
  • Finely chop the onion and sauté in a little oil.
  • Add tuna, onion, one egg, cornmeal and parsley to mashed potatoes. Mix thoroughly.
  • Season the mixture with salt and pepper to taste. Then add the diced cheese. Stir thoroughly, but do not crush the ingredients.
  • Beat the other two eggs in a deep bowl.
  • Shape the dough into small balls. Or you can put them into a foil bag, cut off the corner and squeeze out long cylindrical shapes by cutting them off with a wet spoon.
  • Cover the balls with foil and refrigerate for 30 minutes.
  • Then coat them in flour, then in eggs, and finally in breadcrumbs.
  • At this stage, the croquettes should be frozen. First, spread them out on a flat surface. Once they are completely hard, you can put them into a bag or container without worrying that they will crumble or crumble.
  • Remove the croquettes from the freezer an hour before the scheduled frying time.
  • In a deep frying pan, heat the oil to 180 degrees Celsius.
  • Fry the croquettes a few at a time until the crust is golden.
  • Put paper towels on the plates. Lay out your croquettes on towels that will absorb excess oil.
