While hummus itself is a light snack, many wonder how to make an even lighter version of it. The idea is generally to reduce the number of fattening ingredients without losing the unique flavor of this snack. Here is our recipe for light hummus:

Hummus in a bowl

Ingredients (for 3-4 servings)

  • Half a lemon juice
  • 1 teaspoon of salt (5 g)
  • 1/4 cup of lukewarm water (50 ml)
  • 2 tablespoons of tahini (30 g)
  • 2 cloves of garlic
  • Olive oil (your preferred amount)
  • 2.5 cups of cooked chickpeas (500 g)
  • 1 teaspoon of powdered cumin (5 g)
  • For decoration: chopped parsley or red pepper powder
  • Additional spices to taste: cumin, coriander

A method of preparing

  1. To make our hummus really light, first place the cooked chickpeas in a bowl of lukewarm water so that the water covers it completely. Leave the chickpeas for about an hour – this will make the skin fall off.
  2. After this time, we will start making hummus. To do this, strain the chickpeas to get rid of the peel that has already separated. Pour out almost all the water, save just a little.
  3. Then crush the chickpeas into a mush using a blender.
  4. Crush fresh garlic cloves separately.
  5. Squeeze the juice of half a lemon and add it to the chickpea paste, note – the lemon should not be too large.
  6. Put all ingredients in a bowl and mix thoroughly with a blender on medium speed, gradually adding olive oil.
  7. When ready, taste the hummus and add spices as needed. Decorate and you can serve!

How to prepare tahini?

Ingredients

  • Pinch of salt
  • 2 tablespoons of sesame seeds (30 g)
  • 1 tablespoon of water (15 ml)
  • 1 tablespoon of olive oil (15 ml)

A method of preparing

  1. Rinse the sesame in plenty of water. It is very important to strain it thoroughly afterwards and dry it a bit.
  2. Then, roast the sesame in a very hot pan (the roasting process provides a more intense flavor).
  3. Place the roasted sesame seeds in a bowl, then add the olive oil, water and a little salt – mix everything thoroughly. Keep doing this until the whole thing takes the consistency of a light, uniform paste.

It is worth noting that the secret to success in this recipe is the sustainable use of olive oil. The less you use it, the better. When it comes to storing our hummus, keep it in a cool place, preferably in the refrigerator – up to a maximum of 3 days. As it does not contain preservatives, it may start to spoil after this time.

If you like spicy food, you can try the 2 or 3 teaspoon version of hummus with hot pepper powder or with cayenne pepper. Some people also like to enhance the taste with black pepper – but it all depends on personal preferences and culinary taste.
