Ingredients for the base

  • 1 cup of unsalted cashews (120 g)
  • 1 cup of dates (130 g)
  • 4 dried bananas
  • 1 teaspoon of cinnamon (5 g)
  • 1 pinch of sea salt
  • 2 tablespoons of extra virgin coconut oil (30 g)

  • ½ cup of raw cashews without salt (soaked in water for 8 hours) (60 g)
  • 3 tablespoons of extra virgin coconut oil (45 g)
  • 2 fresh or frozen bananas
  • 3 tablespoons of maple syrup or honey (75 g)
  • 1 tablespoon of chia seeds (15 g)
  • 1 teaspoon of vanilla paste (5 g)
  • A pinch of sea salt

Preparation of the base

  1. If the dates are not too soft, it is recommended that you soak them in hot water for about 10 minutes before starting the preparation. It will be easier to combine them with the other ingredients.
  2. Put the dates, dried bananas and cashew nuts into a blender or a food processor.
  3. We mix the products until a crushed and sticky mixture is obtained.
  4. We dissolve the virgin coconut oil and add it to the resulting mixture.
  5. Then add cinnamon and a little sea salt and continue mixing the mass.
  6. After mixing thoroughly, leave it for a few minutes.
  7. We prepare a cake tin and line it with baking paper.
  8. Then we put the mixture on the bottom of the mold and press it with a spatula so that it is very compact over its entire surface. After all, it will be the basis of the tart.
  9. Then put the prepared base in the refrigerator for 30 minutes to let it solidify and harden slightly.
  10. After taking it out, it is good to wait a few minutes for it to warm to room temperature and in fact even the base itself is so delicious that it can be served as a simple dessert.

Preparation of the filling for the dough

  1. To prepare the filling, it is important to soak the cashews for at least eight hours. This will make the cheese tart a creamier texture.
  2. After the indicated time has elapsed, rinse and dry the cashews.
  3. Then put the cashews and frozen bananas into a blender or food processor and blend well.
  4. Then add the rest of the ingredients: coconut oil, maple syrup or honey, vanilla paste and chia seeds.
  5. We mix all the ingredients in a blender set to the highest speed until a creamy and silky mass is obtained.
  6. Then take the base out of the refrigerator and pour the cheese mass over it.
  7. The cheese tart should be kept in the refrigerator until the dough is completely solidified and hardened.
  8. We take the dessert out of the fridge about twenty minutes before serving.
  9. We can decorate the cake with slices of bananas, nuts, melted chocolate or any other ingredient. Always according to your own fantasy and taste.
