A quick unplanned snack? Stuffed eggs will be perfect as an addition to dinner, lunch or an appetizer when meeting friends. They do not require a lot of effort and financial contribution, in addition, they can be made from many basic ingredients.

Probably we all have eggs in our fridge, which, apart from their excellent taste and extraordinary consistency, are rich in protein and are extremely economical. In addition to fried eggs, poached eggs or Benedict eggs : we can also prepare stuffed eggs and surprise everyone with their tasty content.

Stuffed eggs are the perfect appetizer or snack between meals. They can take the form of cold or hot. Most importantly: they will not overwhelm our home budget. First and foremost, they are a healthy alternative to processed foods, and they also carry a whole range of nutrients. 

Can you imagine Easter without eggs in all kinds of forms? A typical Polish dinner is supplemented with fresh bread and a plate of cold meats and cheeses. Stuffed eggs will undoubtedly prove perfect everywhere there. In this article, you will find 4 simple and tasty recipes based on basic ingredients.

1. Stuffed eggs with tuna and Spanish tomato sauce

Ingredients

  • 8 eggs
  • 2 cans of tuna in oil or in natural pickle
  • 3 tablespoons of tomate frito ( sauce of fried tomatoes, onion and garlic) (45 ml)
  • 2 tablespoons of pitted olives (30 g)
  • 3 tablespoons of dried red pepper (45 g)
  • Salt and pepper (to taste)

For mayonnaise

  • 1 egg
  • 2 tablespoons of lemon juice (30 ml)
  • 1 cup of sunflower oil (250 ml)
  • Salt
  • Chopped garlic

First, hard-boil the eggs. There are undoubtedly a whole host of ways to do this. For example, you can cook them in a small saucepan for about 10 minutes. Then the eggs should be cooled down in cold water and of course the shells should be peeled.

  • In a food processor or blender, beat the egg, along with 1/2 cup of oil, a little lemon juice and salt.
  • Gradually add the rest, stirring constantly until it reaches the familiar mayonnaise consistency. Set aside in the fridge.
  • Then, cut the boiled eggs in half, separate the yolks and set aside.
  • Put into a bowl: tuna, tomato sauce (prepared by you or purchased earlier), egg yolks and olives. Mix everything together to combine the flavors well and get the right homogeneous paste. Add salt and pepper to it.
  • Fill the boiled egg halves with a mixture of vegetables and yolks.
  • Finally, add a little mayonnaise on the tip; if you want, you can also include a pinch of garlic.
  • The final touch is to decorate the eggs with pepper and finely chopped olives.

2. Stuffed eggs baked with ham

First of all, eggs are an excellent source of wholesome protein, and thus are considered one of the healthiest products of animal origin. Undoubtedly, eating eggs has an extremely positive effect on our health, because they also prevent various diseases, for example atherosclerosis.

Ingredients

  • 4 eggs
  • Sliced ​​ham (250 g)
  • 1 tablespoon of mustard (15 ml)
  • 1 tablespoon of mayonnaise (15 ml)
  • ¾ cup of mozzarella cheese (100 g)
  • 1 cup of pitted olives (50 g)
  • Vinegar
  • Salt and pepper

Preparation

  • First, bring the water to a boil in a saucepan, then add a little vinegar, as it will make it easier to peel the eggs later. Cook them for 12 minutes.
  • Stuffing: in a bowl, combine the cooked egg yolks , mayonnaise, mustard and ham cut into thin strips. 
  • Then, mix everything thoroughly to get a homogeneous paste, which you will season with salt and pepper. 
  • Importantly, add the filling to the previously prepared egg halves. Top with, for example, mozzarella (preferably grated).
  • Of course, preheat the oven and bake the eggs at 180 ° C for 10 minutes, until you notice that the cheese has turned golden. Remember that the cheese is supposed to melt but not burn.
  • Serve the cooked eggs with a little mayonnaise and finely chopped olives.

3. Eggs stuffed with vegetables and béchamel sauce

Ingredients

  • 8 eggs
  • ½ onion
  • 1 tomato
  • ½ medium-sized eggplant
  • ½ red pepper
  • 2 cups of béchamel sauce (400 ml)
  • ½ cup of grated cheese (about 50 g)
  • 3 tablespoons of olive oil (45 ml)
  • Salt and pepper

Stuffed eggs – preparation

  • At the very beginning, preheat the oven to 190 ° C.
  • Then, cut the onion, eggplant, and red pepper into small pieces.
  • In a pan, fry the onion with paprika, cook the ingredients for 10 minutes on low heat. Attach the eggplant and leave it for another 5 minutes.
  • The next step is to add the tomatoes, of course preferably without the skin. Season and cook for an additional 20 minutes.
  • Boil the eggs in a saucepan for 10 minutes, then remove them from heat, cool and set aside. Peel the shells. 
  • Cross the eggs as in the previous recipes. Then mix the prepared vegetables with the egg yolk. Of course, stuff all the eggs with stuffing.
  • In a casserole dish, place the eggs covered with the Béchamel sauce and cover with plenty of cheese. Don’t feel sorry for yourself!
  • Bake the eggs for 10 minutes. Leave in the oven on the grilling program for a further 5 minutes, so that the cheese is slightly browned but not too firm.
  • Serve with fresh bread and a healthy drink.

4. Eggs stuffed with guacamole

Ingredients

  • 8 eggs
  • 2 ripe avocados
  • Two lime juice
  • 2 ripe tomatoes
  • 2 small onions
  • 1 clove of garlic (5 g)
  • 1 tablespoon of coriander (15 g)
  • Salt and black pepper

Preparation

  • Boil the eggs in plenty of water for about 10 minutes.
  • Divide the avocado and remove the pit. Extract the flesh and place it separately in a bowl.
  • The next step is to add lime juice to it to avoid black bloom in the meantime.
  • Then remove the yolks from the eggs and add them along with the onion, garlic and tomato to the prepared avocado.
  • Stir until the paste is well integrated.
  • Now add pepper and salt to taste (you can also use garlic).
  • Fill the sliced ​​eggs with guacamole paste. 
  • Serve with the nachos. You can undoubtedly include sour cream too.

Bottom line: remember that you can decorate all recipes according to your preferences. For example, sprouts or watercress look fantastic on eggs.
